Barbecue Onion Meatloaf

Ingredients
1 pound ground beef
1 large egg beaten
1/2 cup bread chopped into cubes or rough chopped
1/3 cup milk
1 tbsp all purpose seasoning
1 tsp garlic powder
1 tsp ground black pepper
Salt to taste
1/3 cup chopped sweet peppers red and green(any color will do)
1/3 cup chopped green onion
4 large garlic cloves chopped finely

Ingredients for barbecue onions
2 cups thin slices white or yellow onion
3 tbsp oil or butter
All purpose seasoning
Barbecue sauce(your favorite)
1/2 cup chicken stock
Salt and pepper to taste

In a small bowl combine the bread and milk and allow to soak for 10 minutes
In a skillet combine the peppers green onions and garlic and sauté in butter or oil until softened
In a larger bowl combine the ground beef with the soaked bread, all the spices and the pepper and green onion mix. Mix everything together until thoroughly combined. Add your meatloaf mixture to a meatloaf pan(or pan of your choice) put the meatloaf in a 350 degree oven 40 minutes or until the meatloaf is cooked through.
While your meatloaf is cooking add your onions to a pan with the oil and sauté until slightly browned and soft. Add the spices and sauté another 2 minutes add your favorite barbecue sauce and the chicken stock, stir and simmer 10 minutes
Remove your meatloaf from the oven and allow to rest 15 minutes, slice and pour over your barbecue onions and enjoy!

Deconstructed Thai Inspired Chicken Salad

Ingredients – chicken
3 medium boneless skinless chicken breast
2 tbsp lemon zest
2 tsp lemongrass powder
1 tbsp honey
1 tsp cumin
1 tsp sesame oil
2 tsp paprika
Salt and pepper to taste
Mix all above ingredients in a bowl thoroughly and allow to marinate 2 hrs to up to over night.
In a hot skillet add the oil and sear all sides until golden brown – medium heat to assure not to burn the honey that is in the marinade. Transfer chicken to a 350 degree oven and continue cooking chicken until cooked through or the internal temperature read 165 degrees
Allow chicken to rest 10 minutes before slicing!

Sauce Ingredients
Flesh of 1 large mango(1 1/2 cups)
1/2 roasted red pepper
2 tbsp rice wine vinegar
1 tbsp honey
2 tbsp oil
2 tbsp lemon juice
Blend all the above in a standing mixer until completely smooth (strain of preferred) optional

Salad Ingredients
2 cups salad spinach(baby spinach)
1 cup diced cucumber
1/2 cup diced mango
1/3 cup thinly sliced onion
Salt and pepper to taste

Tomato ingredients
3 Roma tomatoes
1 tsp sesame oil
Salt and pepper to taste
Slice tomatoes in half drizzle with sesame oil salt and pepper
Add tomatoes to oven under the broiler and until tomatoes start to bubbles and blister.
Put the salad together and enjoy! 🙂

Mango Mustard Chicken Wings

Ingredients
8 chicken wings(1 1/2 pounds)
3 medium sized mangoes, peels and chopped in cubes( 2 cups)
2 heaping tbsp creole mustard
1 tbsp sriracha
2 tbsp honey( more if you prefer a sweeter sauce)
3 large garlic cloves chopped
5 springs fresh thyme
1 tbsp butter
1/3 cup water
3 tbsp rice wine vinegar( apple cider, regular vinegar can be used)
1/4 cup chopped onion
2 tbsp banana ketchup(plain ketchup can be substituted) Banana ketchup is a spicy ketchup
salt and pepper to taste
all purpose seasoning to taste

In a medium sized sauce pot add all the above ingredients except the mustard and butter, place on the stove and allow to simmer 30 minutes on medium heat or until the mangoes slightly start to break down. put the entire mixture in a blender or food processor along with the mustard and butter and blend until smooth. Set to the side until ready to use.
In a bowl add the wings and your favorite all purpose seasoning,salt and pepper to taste.
Allow to marinate 30 minutes to up to over night.
Preheat your oven on broil the highest it can go, place the wings skin side down on your baking tray and place in the oven. Once golden brown turn the wings over skin side up and place back in the oven so that side can also brown.
Once done add the wings to a bowl pour the sauce all over the wings and toss thoroughly coating the wings. Place the wings back in the oven on 350 degree so that the sauce can set on your wings 10 – 15 minutes. Remove and enjoy with your favorite sides!

Cherry Balsamic Roasted Chicken

Ingredient for sauce
1 cup sweet cherries sliced in half seeds  out
1/4 cup minced shallots
2 tbsp chopped fresh thyme
3 garlic cloves chopped
2 tbsp butter
1/2 cup balsamic vinegar
2 tbsp brown sugar(maybe substitute with honey) also ( more sugar if you prefer a sweeter sauce)
salt and pepper to taste

Seasoning for chicken
2 large chicken breast
3 tbsp fresh thyme chopped
2 tbsp lemon zest
1 tsp chopped habanero pepper
salt and pepper to taste
3 tbsp oil for searing

In a bowl add all the chicken ingredients,mix well and allow to marinate at least 30 minutes or up to over night. In a heated skillet add the oil, once hot place the chicken in skin side down and cook until browned all over the chicken. Place the chicken in a heat 400 degree oven until its cooked through or the internal temp reaches 165 degrees. Cover the chicken once done and set it to the side to rest.

In a medium sized pot combine all the sauce ingredients except the butter, place on the stove on medium heat and simmer until the cherries break down and the sauce slightly thickens( 20 to 25 minutes) then add the two tbsp of butter mix until melted then turn the stove off. Slice the chicken and spoon sauce over chicken and enjoy! 🙂

Banana Sauce Braised Chicken Dinner

Ingredients
1 1/2 pounds( or 6 medium thighs) chicken thighs  – can be substituted for breast.
1/2 cup banana sauce( international supermarkets caribbean aisle)
1/4 rice wine vinegar
6 large garlic cloves chopped
1 large onion(or two medium onions) chopped
1 tbsp sesame oil
1/4 cup ketchup
2 tbsp fresh thyme chopped
2 tbsp all purpose seasoning(your favorite brand)+ 2 more tbsp for the sauce
2 tbsp brown sugar
3 tbsp balsamic vinegar
1/3 cup water
2 tbsp butter
2 tbsp vegetable oil
salt and pepper to taste

Season the chicken with salt pepper all purpose seasoning and thyme, marinate 30 minutes or up to over night. Heat cast iron skillet, add the oil and sear the thighs starting with skin side down to release the fat from the skin, flip over and sear the other side then remove from the skillet. Pour out the oil add the butter once melted add the onions and saute 6 minutes . Add the garlic and saute another 2 minutes( be careful not to burn the garlic). Add the banana sauce,ketchup,balsamic,rice wine vinegar,brown sugar,water,sesame oil, all purpose seasoning and salt and pepper to taste. Stir the sauce once boiling, add the chicken back in and place the skillet in the oven 375 degree for 30-45 minutes or until your chicken is thoroughly cooked through and sauce thickens.

Goat Cheese Mash Potatoes
1 pound red skin potatoes
1/3 cup milk
3 tbsp butter
1/2 cup fresh goat cheese
1/4 chopped fresh parsley
salt and pepper to taste
Boil the potatoes skin on until tender, then drain and return to the hot pot. Add all other ingredients and mash.

Garlic Saute Green Beans
2 cups green beans
2 cup water
2 tbsp butter
2 tbsp chopped fresh garlic
salt and pepper to taste
In a pot add the beans and the water, bring to a boil and allow to simmer 5 minutes
Drain the water off and remove the beans, add the butter and garlic and saute 3 minutes
Add the beans back to the pot mix well and saute another 1 minute 🙂

Oven Roasted Chicken Legs

2 pounds chicken legs
2 tablespoons smoked paprika
1/2 teaspoon cumin
2 tablespoon hot sauce
1 teaspoon cayenne
1/4 cup brown sugar
1 tablespoon onion powder
2 tablespoon chopped fresh thyme
salt and pepper to taste

In a large bowl mix all the above ingredients together thoroughly, marinate 30 minutes to up to over night.
Preheat the oven 425 degrees add the chicken uncovered to the oven and roast 30 minutes until brown, reduce the heat to 350 and continue cooking until the juices run clear and the chicken is completely cooked.
Remove from the oven pour the pan juices over the chicken. Enjoy!
