BrownStew Chicken Recipe

Ingredients
6 boneless skinless chicken thighs
1tsp garlic powder
1tsp paprika
1/4 tsp cayenne
1tsp ground ginger
Salt and pepper to taste cup
1/4 cup white vinegar
1/2 cup ketchup
3 tbsp brown sugar
2 tbsp soy sauce( or to taste) 3 tbsp for stronger saltier taste
1 1/2 cups unsalted chicken stock
1 medium onion
5 large garlic cloves
1/2 cup chopped carrots
1/2 cup chopped potatoes
Salt and pepper to taste

Season the chicken with the garlic powder,paprika,cayenne,ginger salt and pepper.
In a hot skillet with oil, sear the chicken on both sides until deep golden brown.
Remove the chicken, discard half of the oil or leave behind 2 tbsp of oil.
Sauté the garlic carrots and onions 5 minutes. Add the brown sugar and sauté another 2 minutes.
Add the vinegar, ketchup and soy sauce and stir, then add potatoes and the chicken stock, bring back to a simmer and add the chicken back to the pot. Cover and simmer 20 minutes until the chicken is cooked through and the sauce is nice and thick. Season to taste with salt and pepper and enjoy!

Sweet and Spicy Cajun Chicken Wings

Ingredients
For the seasoning paste
1 tbsp oil(of your choice)
2 tbsp brown sugar
2 tbsp McCormick gourmet Cajun seasoning
1 tbsp Keith Lorren scotch bonnet hotsauce
1 tbsp pineapple juice
1/4 tsp black pepper
Salt to taste
1/4 cup red bell peppers
1/4 cup yellow bell peppers
1/4 cup green bell peppers
5 large garlic cloves chopped
1 pound chicken wings

In a large bowl mix everything above and allow to marinate 30 minutes to up to over night
Preheat the oven to 400 degrees, add your chicken to the oven and roast until perfectly golden browned and cooked through. Enjoy!

REMEMEBER ALL INGREDIENTS CAN BE DOUBLED OR REDUCED TO SUIT YOUR TASTE!

Sticky Wing Recipe

INGREDIENTS

1 1/2 pounds chicken wings
1/3 cup brown sugar
1/4 cup soy sauce
1 tbsp hot chili and garlic in soybean oil
1tsp sesame oil
2 tbsp keith lorren all purpose seasoning

Season the chicken with the all purpose seasoning set aside allow to marinate 30 minutes to up to overnight.
In a bowl mix together all other ingredients until thoroughly combined. Preheat the oven to 400 degrees, add the chicken to the oven uncovered and bake until browned. Take the sauce (at this point will be very thin) pour all over the wings , place the wings back in the oven and continue cooking flipping the wings  every 5 – 10 minutes until the sauce thickens and adhere to the wings. Remove from the oven and enjoy!

Homemade Chicken Soup

Ingredients
Dumplings
1 cup flour
1/3 cup water
1/2 tsp salt
Mix thoroughly to form a dough

Soup ingredients
8 cups water
5 medium chicken legs
1 large chayote – peeled and chopped
6 allspice berries(pimento seeds)
1 scotch bonnet pepper or habanero pepper
3 stalks of scallions
3 sprigs of Fresh thyme(add one sprig in beginning and two sprigs the last 30 minutes of cooking)
1 package of grace chicken cock soup mix(more if you want a thicker soup)
3 cups chopped kobacha squash(pumpkin)
1 pound yellow yam cut into medium chunks
5 large cloves of garlic
1 cup chopped carrots( I was missing this Ingredient in my video recipe but if you able to get it use it)
Salt and pepper to taste

Healthy Chicken Salad

Ingredients
1 cup fully cooked chicken breast cut into cubes
1/2 cup non fat plain Greek yogurt
2 tbsp sweet pickles relish
1 heaping tbsp creole grainy mustard
1/4 cup chopped fresh plum fruit(you can use grapes)
1/4 cup chopped white onion
1/4 cup chopped bell pepper
1 tbsp chopped fresh thyme
2 tbsp chopped fresh parsley
1 tsp lemon pepper seasoning
1 tsp lemon juice
Salt and pepper to taste

In a bowl mix together the yogurt,relish,mustard,lemon juice,salt and pepper, lemon pepper and mix thoroughly. Set aside . In a bigger bowl toss the chicken,thyme,parsley,onion and bell pepper. Add the yogurt mixture to the chicken mixture and gently toss until combined. Refrigerate 4-6 hours and enjoy!

Red and Green Tortilla Crusted Chicken Breast

Ingredients
3 medium – large boneless skinless chicken breast
1tbsp smoked paprika
2 tbsp McCormick smoke house seasoning
2tbsp all purpose seasoning
Salt and pepper to taste
3 eggs beaten
1 tbsp hot sauce
2 tbsp whole milk
6 cups (or more if needed) multi colored tortilla chips
3 tbs melted butter

For the sauce
1/2 cup apricot preserves
1/4 cup ketchup
2 tbsp apple cider vinegar
1/4 cup fine diced onion
1/4 cup water
2 Large garlic cloves chopped
Salt and pepper to taste

Combine all ingredients in a sauce pot and simmer on medium heat for 15 minutes set aside

Preheat the oven to 400 degrees
Season the chicken with the salt pepper,all purpose seasoning, smoked paprika and 1 tbsp of the McCormick smoked house , set aside and allow to marinate 30minutes to up to over night.
In another bowl combine eggs hot sauce and milk and beat together, set aside. Using your hands or food processor crush your chips until coarse texture, add remaining McCormick smokehouse to chips and mix. Dust the chicken breast with the flour, dip and roll the chicken in the egg mixture and then gently roll the chicken into the crushed tortilla completely covering your chicken. Transfer the chicken to a baking pan or cast iron skillet, drizzle the melted butter all over your chicken and bake in oven 400 degrees until cooked through 20-30 minutes depending on your oven and size of your chicken breast. For best results use a thermometer and cook chicken to 165 degrees internal temp. Allow to rest 10 minutes slice and enjoy!
