Nicki Minaj Chun Li Wings

3 pounds chicken wings
2 tbsp McCormick garlic herb seasoning
Salt and pepper to taste
Coconut oil for greasing pan and brushing wings before placing in the oven.
Season the wings with the above ingredients and along to marinate 2hrs to up to over night
Place the wings in a heated 425 degree oven and bake until lightly golden.

Sauce Ingredients
1 1/2 cups Nicki minaj’s Myx Moscato Peach Flavor
1/2 cup soy sauce
1/4 cup brown sugar
3 tbsp Korean chili garlic sauce
3 tbsp Korean sushi ginger
2 tbsp cornstarch
In a small bowl mix 1/2 cup myx Moscato with the cornstarch and set aside
In a sauce pan add the 1 cup myx Moscato,chili sauce,brown sugar,soy sauce and sushi ginger and bring to a simmer on medium high heat for 5 minutes. Add the cornstarch and Moscato mixture , making sure to mix as you pour to have even distribute and no lumps. Mix well simmer another 2 minutes until thickened enough to coat the back of your spoon 3 minutes. Remove the wings from the oven and baste with the sauce. Return the wings back to the oven until the wings become deep golden brown and sticky. Keep basting if you more sauce left! They will be even more delicious! Remove the wings once they are done and enjoy!


Moroccan Stew Chicken

2 medium sized bone in chicken breast cut into chunks
1 tsp ground coriander
1tsp cumin
1 tsp ground ginger
Handful of cilantro 1/2 cup
1/2 tsp smoked paprika
1/2 tsp cayenne
1/4 tsp cinnamon
One 16 oz can chicken broth
1 cup dry white wine
1 medium onion chopped
1 medium red bell pepper chopped
1 medium green bell pepper chopped
2 tbsp golden raisins
Salt and pepper to taste

Season the chicken with the coriander,cumin,ginger,paprika,cayenne, onion ,  salt and pepper, allow to marinate 4 hrs or up to over night.
In a heated skillet add 2 tbsp vegetable oil make it really hot. Add the chicken to the hot pan and brown all sides, this does not have to be perfect. Deglaze the chicken with the white wine then reduce it by half. Add the cinnamon and chicken broth. Mix to combine reduce the heat to medium low, cover and allow to simmer 30 minutes. After 30 minutes add the peppers and golden raisins . Turn the heat up to medium high and allow sauce to thicken. ALWAYS TASTE FOR SALT AND PEPPER. . This should take another 10 minutes. After 10 minutes stir in the cilantro and turn the heat off. Meat should be very tender sauce thickened and cilantro still nice and bright. Enjoy!

The Best Oven Fried Chicken

4 medium sized bone in chicken breast
1/4 tsp cinnamon
1/2 tsp cayenne
1/2 tsp red pepper flakes
1/2 tsp ground coriander
1/2 tsp ground garlic
1/2 tsp chili powder
Salt and pepper to taste
Marinate the chicken with all the above ingredients – 2 hrs or up to over night

Egg wash
2 whole large eggs beaten
2 tbsp milk
2 tbsp hot sauce (more if preferred ) 🙂
Mix thoroughly

Crust Ingredients
5 large fresh garlic cloves
5 sprigs fresh thyme
1 cup fresh parsley
Salt and pepper to taste
1/2 tsp red pepper flakes
1 cup panko bread crumbs
3 cups plain cornflakes
1//3 cup Parmesan cheese
In a food processor add all the crust ingredients and blitz until you have rough but small crumbs
Set aside.

Pre heat your oven 375 degrees
Prepare a greased baking pan
Take the marinated chicken and coat it in the egg mixture completely.
Then take the egg coated chicken and coat it in the cornflake crumb.
Allow to rest 5 minutes before placing it in the oven .
Just before going in the oven lightly drizzle coconut oil (which i used) or butter which also works.
Place the chicken in the center of the 375 degree oven and bake 30-45 minutes . This recipes varies as far as the time. It depends on how many breast you’re making and the condition of your oven. Some may take 1 hr. To be sure, your internal temp of your chicken should read 165 degrees. The. Immediately remove from the hot pan allow to rest 5-10 minutes and serve warm. ENJOY.

Easy Gungo Rice and Peas

1 cup pigeon peas(gungo peas)
5 cups water (or chicken stock)
1 cup coconut milk
1 bay leaf
1 habanero pepper deseeded (PLEASE USE GLOVES VERY HOT)
3 stalks scallion
2 tbsp fresh ginger chopped
5 large garlic cloves chopped
2 bouillon cubes
4 sprigs of fresh thyme
3 tbsp unsalted butter
Salt and pepper to taste

Combine the peas water and bay leaf in a pot covered and simmer on medium low heat until the peas are tender. When the peas become tender add all other ingredients stir thoroughly cover and simmer until liquid evaporates and rice is tender and cooked.


Fried Chicken
3 stalks of scallion
6 large garlic cloves
1 habanero pepper seeds removed
1/2 if a medium onion
1 cup cilantro leaves
1 cup parsley leaves
2 inch piece fresh ginger
Place all above ingredients in a food processor and make a paste.
Pour the paste on to the chicken then season with Jamaican choice chicken seasoning,salt and pepper.
Allow to marinate 4hrs to up to over night.

Dredging ingredients
4 cups all purpose flour
1 cup seasoned bread crumbs
3 tbsp baking powder
3 tbsp Jamaican choice chicken seasoning(or your favorite chicken seasoning)
2 tbsp smoked paprika
1 tbsp cayenne pepper
Salt and pepper to taste
Mix all thoroughly to combine

1 1/2 cup whole milk
4 large eggs beaten
3 tbsp Louisiana hotsauce
Mix all the above until thoroughly combined

2tbsp unsalted butter
1 tbsp oil
1/2 medium onion
2 Roma tomatoes chopped
4 garlic gloves chopped
2 tbsp fresh ginger chopped
3 fresh thyme sprigs
1/4 cup ketchup
2 tbsp Apple cider vinegar
1 tbsp brown sugar
2 stalks scallions
Salt and pepper to taste

How To Make Marinade For Chicken From Scratch

1/2 cup fresh cilantro
1 cup fresh parsley
1 cup scallions or a whole tied bunch
The juice and zest from 3 whole lemons (or 1/3 cup lemon juice)
The juice from 1 whole lime
5 large garlic cloves
1 tsp red pepper flakes
1 tsp garlic powder
3 tbsp Jamaica’s choice chicken seasoning (this can be found in the Caribbean aisle in large supermarkets or international supermarkets)
Salt and pepper to taste
