Ingredients
1 1/2 pounds( or 6 medium thighs) chicken thighs  – can be substituted for breast.
1/2 cup banana sauce( international supermarkets caribbean aisle)
1/4 rice wine vinegar
6 large garlic cloves chopped
1 large onion(or two medium onions) chopped
1 tbsp sesame oil
1/4 cup ketchup
2 tbsp fresh thyme chopped
2 tbsp all purpose seasoning(your favorite brand)+ 2 more tbsp for the sauce
2 tbsp brown sugar
3 tbsp balsamic vinegar
1/3 cup water
2 tbsp butter
2 tbsp vegetable oil
salt and pepper to taste

Season the chicken with salt pepper all purpose seasoning and thyme, marinate 30 minutes or up to over night. Heat cast iron skillet, add the oil and sear the thighs starting with skin side down to release the fat from the skin, flip over and sear the other side then remove from the skillet. Pour out the oil add the butter once melted add the onions and saute 6 minutes . Add the garlic and saute another 2 minutes( be careful not to burn the garlic). Add the banana sauce,ketchup,balsamic,rice wine vinegar,brown sugar,water,sesame oil, all purpose seasoning and salt and pepper to taste. Stir the sauce once boiling, add the chicken back in and place the skillet in the oven 375 degree for 30-45 minutes or until your chicken is thoroughly cooked through and sauce thickens.

Goat Cheese Mash Potatoes
1 pound red skin potatoes
1/3 cup milk
3 tbsp butter
1/2 cup fresh goat cheese
1/4 chopped fresh parsley
salt and pepper to taste
Boil the potatoes skin on until tender, then drain and return to the hot pot. Add all other ingredients and mash.

Garlic Saute Green Beans
2 cups green beans
2 cup water
2 tbsp butter
2 tbsp chopped fresh garlic
salt and pepper to taste
In a pot add the beans and the water, bring to a boil and allow to simmer 5 minutes
Drain the water off and remove the beans, add the butter and garlic and saute 3 minutes
Add the beans back to the pot mix well and saute another 1 minute šŸ™‚
