Rum And Raisin Icecream From Scratch

Ingredients
2 cups heavy cream
2 cup whole milk
2/3 cups granulated sugar
6 egg yolks
1/3 cup of the rum soaks raisins drained (see below)
2 tbsp of the rum from the rum soaked raisins
1/8 tsp salt
1 tbsp vanilla extract
1/2 tsp coconut extract

Rum soaked raisins
1 1/2 cups golden raisins
1 cup white rum
1/2 cup moscato
Add the raisins to a mason jar and cover with the alcohol and soak in the refrigerator for 24 hrs or longer for stronger rum taste

How To Make Marinade For Chicken From Scratch

Ingredients
1/2 cup fresh cilantro
1 cup fresh parsley
1 cup scallions or a whole tied bunch
The juice and zest from 3 whole lemons (or 1/3 cup lemon juice)
The juice from 1 whole lime
5 large garlic cloves
1 tsp red pepper flakes
1 tsp garlic powder
3 tbsp Jamaica’s choice chicken seasoning (this can be found in the Caribbean aisle in large supermarkets or international supermarkets)
Salt and pepper to taste

How To Make Beef Soup Meshascorner Beef Soup

Ingredients
3 bone in beef shanks
1 cup kobacha squash(or yellow pumpkin) cut into chunks
1 chayote squash washed and chopped
3 medium sized carrots (washed peeled and chopped into cubes)
2 red skin potatoes (washed peeled and chopped into cubes)
2 bouillon cubes
1 habanero pepper (seeds and ribs removed)
1 pack grace soup mix(this can be found in any international market or smaller supermarkets in the Caribbean aisle)
6 fresh thyme sprigs
8 cups of water or enough to completely submerge the beef

Dumplin
1 1/2 cups all purpose flour
1 tsp salt
1/2 cup water

No Bake Lemon Tart

Ingredients
1 1/2 cups fresh squeezed lemon juice
4 whole large eggs
2 cups sugar
1 cup milk
2 tsp unflavored gelatin
6 tbsp butter

In a small bowl add the milk then sprinkle the gelatin on top, all to sit 15 minutes

In a bigger bowl combine sugar,eggs and lemon juice,mix generously to combine all ingredients 

In a medium pot add the mixture and slowly bring to a slight simmer , immediately turn the heat off and remove the pot from the stove and whisk in the butter.

Strain the mixture to assure its creamy and smooth.
Add the milk and gelatin mixture and mix thoroughly to combine.
Pour the lemon mixture into the tart shell and refrigerate for 6 hours or up to over night .
I refrigerated mines over night and it was perfect!

Crust
25 Golden Oreos – remove the cream from 10 of the Oreos
1/2 cup melted unsalted butter

Smash your cookies by using a wooden spoon or food processor.
Then add the butter your cookies should feel like wet sand consistency
Place the cookie mixture in the tart pan and gently press into the bottom and sides of the pan as evenly as you can.
Allow the crust to rest in the refrigerator 3 hrs

Candied Lemon Slices
1/4 cup water
1/4 cup sugar
Lemon slices from 2 lemons

Place all ingredients in a pot and simmer on medium high heat until syrup consistency and sticky

Homemade Whipped Cream
1 pint heavy whipping cream
1/4 cup sugar
1 tsp vanilla extract

Using a whisk or standing mixer beat the heavy cream,vanilla extract  and sugar until you attain stiff peaks

Jerk Chicken Recipe

Ingredients
1 pound chicken legs and thighs
1/4 cup Keith Lorren jerk seasoning
1/4 cup soy sauce
1/4 cup coconut vinegar(white vinegar is fine here)
Juice from 1 lime
3 sprigs fresh scallions
4 large garlic cloves
1 Serrano chili(scotch bonnet – jalapeño- habanero all works here)
Salt and pepper to taste

In a food processor combine all the above ingredients except the chicken, pulse until smooth. Pour the marinade over the chicken and allow to marinate 8 hrs to up to overnight.
Remove the chicken from the refrigerator 15 minutes before roasting so it can come up to room temperature. Preheat the oven to 400 degrees, place the chicken in the center rack and roast 1 hour or until the chicken is perfectly golden tender and cooked all the way through. Enjoy!
