Ingredients
1 1/2 cups fresh squeezed lemon juice
4 whole large eggs
2 cups sugar
1 cup milk
2 tsp unflavored gelatin
6 tbsp butter
In a small bowl add the milk then sprinkle the gelatin on top, all to sit 15 minutes
In a medium pot add the mixture and slowly bring to a slight simmer , immediately turn the heat off and remove the pot from the stove and whisk in the butter.
Pour the lemon mixture into the tart shell and refrigerate for 6 hours or up to over night .
I refrigerated mines over night and it was perfect!
Crust
25 Golden Oreos – remove the cream from 10 of the Oreos
1/2 cup melted unsalted butter
Smash your cookies by using a wooden spoon or food processor.
Then add the butter your cookies should feel like wet sand consistency
Place the cookie mixture in the tart pan and gently press into the bottom and sides of the pan as evenly as you can.
Allow the crust to rest in the refrigerator 3 hrs
Candied Lemon Slices
1/4 cup water
1/4 cup sugar
Lemon slices from 2 lemons
Place all ingredients in a pot and simmer on medium high heat until syrup consistency and sticky
Homemade Whipped Cream
1 pint heavy whipping cream
1/4 cup sugar
1 tsp vanilla extract
Using a whisk or standing mixer beat the heavy cream,vanilla extract and sugar until you attain stiff peaks
