Spicy Barbecue Meatballs

Ingredients
1 pound ground beef 90% lean 10%fat
1/2 medium white onion
1 medium red bell pepper
5 large garlic cloves
1 tbsp rosemary
3 stalks scallions
1/3 cup breadcrumbs
1 large egg beaten
1 tbsp all purpose seasoning (your preferred brand)
Salt and pepper to taste
In the food processor combine the rosemary,onion,bell pepper,scallion and garlic and blitz to rough consistency. Transfer to the bowl(reserve 2 tbsp of this mixture) then add the beef, egg, all purpose seasoning and bread crumbs. Mix until combined. Preheat the oven 375, form your meatballs, should yield 10 medium meatballs or 8 really large meatballs . Bake in oven 20 minutes .

Sauce
2 tbsp butter
2 tbsp water
1 tbsp brown sugar
2 tbsp gochujang chili sauce
3/4 cup heinz bbq sauce CAROLINA MUSTARD STYLE

Combine the sauce ingredients into a sauce pot and simmer on medium low for the same time the meatballs are in the oven. After 20 minutes remove meatballs from oven and pour sauce completely over your meat balls . Transfer them back to the oven and cook 10 more minutes ! Enjoy!

Butter Pecan Sweet Potato Pie

Ingredients
1 nine inch pie crust
3 cups sweet potato purée
1/2 cup brown sugar
1/2 cup granulated sugar
1 cup carnation milk
3 eggs
3 tbsp melted butter
1 tsp pumkin pie spice
2 tsp ground cinnamon
2 tsp ground ginger
These spices are to taste however this is a great start(add more or less as preferred)
1 tsp KOSHER salt – if you’re using table salt/regular salt please use 1/2 tsp salt

Preheat the oven to 350 degrees
Mix all the ingredients above EXCEPT the eggs in a standing mixer or hand mixer thoroughly until smooth. TASTE your mixture and adjust flavor to your liking. Next add the eggs and mix again until smooth. Pour mixture in a 9inch pie crust(i used a frozen pie crust from Kroger) and bake 30 minutes
This completes step 1.

STEP 2

Crumble Topping
Fyi- u may have excess crumble left but it’s better to have than to not have enough.
1 1/2 cups nilla wafers
4 tbsp FROZEN OR SUPER COLD butter
2 tbsp granulated sugar
1 tsp cinnamon
1/2 cup pecans chopped

While the pie is baking , add he cookies,butter ,cinnamon and sugar to a food processor and blitz until your mixture resembles course sand. (See my video recipe on my YouTube channel www.youtube.com/meshascorner)
Next transfer mixture to a bowl or plate and add the chopped pecan gently mixing to combine. PLEASE KEEP CRUMBLE COLD AT ALL TIMES, ESPECIALLY OF NOT BEING USED RIGHT AWAY.
After 30 minutes remove the pie from the oven and add the crumble all over the top, transfer pie back to the oven and bake another 30 minutes until pie is cooked through and the crumble is nice and golden and crisp on top. Allow the pie to rest and cool to room temperature. For better results chill over night in the refrigerator 🙂 this pie was so amazing guys i can’t even deal! Enjoy!

Winter Vegetable Beef Stew

Ingredients
2 1/2 pounds chuck beef
1 large carrot
1 medium sweet potato
1 medium onion
1 medium red bell pepper
2 bay leaves
6 large garlic cloves crushed
4 tbsp private selections green chili rub seasoning (found in Kroger )
1 tsp cayenne pepper
3 tbsp fresh cilantro
2 tbsp fresh grated lemon zest
2 tbsp oil
2 tbsp butter
2 tbsp flour
1 cup white wine
4 cup beef stock/broth
1 cup water
Salt and pepper to taste

Cut the meat into cubes, season with lemon zest and the chili rub allow to marinate 30 minutes or even better up to over night.
Heat the oil in a large pot, once hot add the meat and brown all sides. Add the flour and stir well coating all the meat 2 minutes. Add the wine and allow to simmer 1 minute. Add the stock and water, cover and allow to cook on medium low heat until tender 60-90 minutes depends on the toughness of your meat. Once the meat is tender add all the sweet potato,carrots, onion, garlic and red bell pepper . Increase the heat to medium high – medium high is number 8 on my stove. Sweet potatoes cook fast especially when in a broth or water so by the time your sauce reduce your veggies will be cooked 🙂
Once your sauce has thicken and veggies are cooked turn the stove off and add the cilantro and butter  stir and enjoy! Season salt and pepper to taste !

Nicki Minaj Chun Li Wings

Ingredients
3 pounds chicken wings
2 tbsp McCormick garlic herb seasoning
Salt and pepper to taste
Coconut oil for greasing pan and brushing wings before placing in the oven.
Season the wings with the above ingredients and along to marinate 2hrs to up to over night
Place the wings in a heated 425 degree oven and bake until lightly golden.

Sauce Ingredients
1 1/2 cups Nicki minaj’s Myx Moscato Peach Flavor
1/2 cup soy sauce
1/4 cup brown sugar
3 tbsp Korean chili garlic sauce
3 tbsp Korean sushi ginger
2 tbsp cornstarch
In a small bowl mix 1/2 cup myx Moscato with the cornstarch and set aside
In a sauce pan add the 1 cup myx Moscato,chili sauce,brown sugar,soy sauce and sushi ginger and bring to a simmer on medium high heat for 5 minutes. Add the cornstarch and Moscato mixture , making sure to mix as you pour to have even distribute and no lumps. Mix well simmer another 2 minutes until thickened enough to coat the back of your spoon 3 minutes. Remove the wings from the oven and baste with the sauce. Return the wings back to the oven until the wings become deep golden brown and sticky. Keep basting if you more sauce left! They will be even more delicious! Remove the wings once they are done and enjoy!
