Easy Meat and Cheese Lasagna

Ingredients
Ricotta mixture
32 oz tub ricotta cheese part skim milk
2 large eggs
1/3 cup chopped parsley
1/2 tsp red pepper  flakes
1 cup grated Parmesan cheese
Salt and pepper to taste
In a large bowl mix all the above ingredients thoroughly and place in the refrigerator until ready for use.

You will also need 1 box lasagna noodles and 1/2 cup chopped fresh basil

Meat mixture
2 pounds ground turkey
1 pound ground sausage
1 whole white onion chopped
6 large garlic cloves chopped
1 24oz jar marinara sauce
1/4 tsp red pepper flakes
1 cup water
2 tbsp dried basil
Salt and pepper to taste
Brown the meat, add the onions garlic and basil, cook covered for 10 minutes on medium heat.
Next add the marinara sauce and the cup of water. Mix cover and simmer 20 minutes stirring every 5 minutes. Set aside.

Southern collard greens

Ingredients
1 smoked turkey wing flat
1 bag collard greens or 1 pound
3 tbsp Apple cider
3 tbsp hot sauce or more to taste
1 medium bell pepper chopped
1 medium onion chopped
6 large garlic cloves crushed
Enough water to cover the smoked turkey
Salt and pepper to taste

Cornbread Dressing

Recipe Ingredients
Cornbread
2 cups flour
2 cups yellow cornmeal
2 eggs
1/4 cup sugar
6 tsp baking powder
1 stick melted butter
2 tsp salt
3 cups buttermilk

Turkey Stock
2 large turkey wings
8 cups water
3 celery stalks
1 medium onion
5 sprigs thyme
5 large garlic cloves

Dressing
The entire fresh homemade cornbread
4 eggs thoroughly beaten
1 large red bell pepper chopped
1 medium green bell pepper chopped
1 medium onion chopped
3 celery stalks chopped
1 stick butter
Ground sage to taste(I used about 1 tbsp) always taste your dressing before adding eggs
Poultry seasoning to taste( 1 1/2 tbsp)
Salt and pepper to taste
5-6 cups of the turkey stock
All the meat from ONE turkey wing

Gravy
3 tbsp butter
3 tbsp flour
4 cups turkey stock
Season to taste salt and pepper
3 sprigs fresh thyme
In a skillet melt the butter add the flour and cook out 2 minutes, then add the stock keep mixing until there’s no lumps and the gravy thickens season and enjoy!

Roasted Blueberry Chipotle Turkey Meatloaf

Ingredients

FOR MEATLOAF
2 pounds ground turkey
1/2 cup fine diced onion
1/2 cup chopped scallions
6 large garlic cloves finely chopped
1 cup panko breadcrumbs
2 large eggs
1/4 cup Fischer wieser roasted blueberry chipotle sauce(I found this in Kroger supermarket  this condiment can also be found on Amazon) however if you are a little more adventurous like myself  there will also be a scratch made blueberry chipotle sauce below!
1/4 cup chopped fresh parsley
1 cup chicken broth
Salt and pepper to taste
In a large bowl mix together all the above ingredients EXCEPT chicken broth! Mix until thoroughly combined, preheat your oven 350 degrees. Form your meatloaf the shape of a log in a well greased baking pan. Heat up the chicken broth in the microwave or on stove top, then pour the broth in the pan with the meatloaf – place the meatloaf in the oven and bake 1hr checking after 40 minutes.

FOR SAUCE
1 cup roasted blueberry chipotle sauce
2 garlic cloves chopped
1/4 cup chopped onion
2 tbsp butter
1/4 cup water
Salt and pepper to taste
Combine everything in a small sauce pan simmer until thick and the onions are soft and sweet
Once sauce is done remove the meatloaf from the oven and pour the sauce all over the meatloaf! Return to oven and cook another 15 minutes . Remove the meatloaf and allow it to rest at least 15-20 minutes before carving. Total cooking time for this size meatloaf should be at least 1hr 10 minutes.

Homemade blueberry chipotle sauce
1 cup fresh blueberries
1/2 cup white wine vinegar
1/2 cup honey
2 tbsp chopped with the juice chipotle pepper (the one in the can) Mexican aisle in every supermarket
1 garlic clove
1 tsp ground ginger
Salt and pepper to taste
Simmer everything in a sauce pot until thick and enjoy!

Ultimate Turkey Meatloaf

Ingredients for meat mixture
2 pounds ground turkey
1/3 cup fine diced plobano pepper
1/3 cup fine dice onion
3 large garlic cloves 
1/4 cup chopped fresh parsley
2 beaten eggs
1 cup Panko breadcrumbs 
1/2 cup milk
Garlic powder to taste
Onion powder to taste 
Salt and pepper to taste
Sauce
1/2 cup ketchup
1/2 cup chipotle mango salad dressing
1 tbsp butter 
3 tbsp brown sugar
1 tbsp apple cider vinegar
1/2 cup cherry tomatoes(more if you prefer more)
1/4 cup water 
Salt and pepper to taste
Preheat your oven to 350 degrees
In a regular sized bowl combine the milk and Panko and allow to sit 5 minutes.
In a larger bowl combine the turkey poblano pepper onion garlic eggs garlic powder onion powder and salt and pepper. Then add the milk and Panko mixture and combine everything together mixing until combined. 
Grease your baking pan using cooking spray or simply butter.
Put your meat mixture into the pan and form a log(any shape you prefer works)
Place the meat mixture in the oven and allow it to cook 30 minutes.
In another pot combine all the sauce ingredients and simmer on the stove 15 minutes on medium heat or until the tomatoes are slightly broken down. 
After 30 minutes pull the meat loaf out and pour the sauce all over the Meatloaf allowing the tomatoes to fall on top of the Meatloaf. Place it back in the oven and cooked another 15 to 20 minutes basting every 5 minutes. Once cooked remove from oven and allow to rest 15 minutes before slicing. Enjoy!
