Sunday Dinner Buttermilk Fried Chicken

Chicken ingredients
1 cup buttermilk
6 chicken thighs
2 tbsp scotch bonnet hot sauce(use hot sauce you prefer)
2 tsp smoked paprika
1 tbsp thyme leaves
2 tsp garlic powder
1 large egg
Salt and pepper to taste
2 cups flour – season the flour
Garlic powder – cayenne powder- ground ginger – salt and pepper all to taste.
In a large bowl mix all the above ingredients EXCEPT the flour, mix until combined.
Add the chicken to marinade and coat thoroughly- allow the chicken to marinate 6 hrs to up to over night.
In a hot skillet add your fave oil to fry with. In another bowl add the flour and spices then coat the chicken, allow the chicken to rest 5 minutes before frying. Add the chicken to the hot oil and fry until thoroughly cooked through golden delicious and juicy.

Gravy
2 tbsp butter
2 tbsp flour
1 cup chicken stock
1/2 cup milk
2 tbsp chopped parsley
All purpose seasoning
Salt and pepper to taste
Melt the butter – add the flour and cook 1 minute – add your stock and whisk well – add the cream and keep mixing until sauce comes to a bubbles and thicken – season with the all purpose seasoning salt pepper and parsley – then remove from heat.

Gingerbeer Oxtail Stew

Ingredients
2 pounds Oxtail
1 tbsp Keith Lorren Oxtail beef seasoning(salt and pepper or all purpose seasoning if you don’t have this spice)
1 tbsp garlic powder
Salt and pepper to taste
Dried thyme leaves
2 bottles ginger beer
1/2 cup chopped red bell peppers
1/2 cup chopped green bell peppers
1 medium onion
1 16 oz can broth (veggie or chicken) I did not use beef broth because I wanted stronger ginger beer flavor)
1/4 cup ketchup(add this when you had the broth and ginger beer)

BrownStew Chicken Recipe

Ingredients
6 boneless skinless chicken thighs
1tsp garlic powder
1tsp paprika
1/4 tsp cayenne
1tsp ground ginger
Salt and pepper to taste cup
1/4 cup white vinegar
1/2 cup ketchup
3 tbsp brown sugar
2 tbsp soy sauce( or to taste) 3 tbsp for stronger saltier taste
1 1/2 cups unsalted chicken stock
1 medium onion
5 large garlic cloves
1/2 cup chopped carrots
1/2 cup chopped potatoes
Salt and pepper to taste

Season the chicken with the garlic powder,paprika,cayenne,ginger salt and pepper.
In a hot skillet with oil, sear the chicken on both sides until deep golden brown.
Remove the chicken, discard half of the oil or leave behind 2 tbsp of oil.
Sauté the garlic carrots and onions 5 minutes. Add the brown sugar and sauté another 2 minutes.
Add the vinegar, ketchup and soy sauce and stir, then add potatoes and the chicken stock, bring back to a simmer and add the chicken back to the pot. Cover and simmer 20 minutes until the chicken is cooked through and the sauce is nice and thick. Season to taste with salt and pepper and enjoy!

Chocolatechip Banana Bread

Ingredients
2cups flour
1/2 tsp BAKING SODA
1/2 tsp salt
1/2 cup brown sugar
1/4 cup white sugar
2 eggs
1 tsp lemon juice
1/2 tsp lemon zest
1 1/2 tsp vanilla extract
1/4 tsp almond extract
6 tbsp melted butter
2 LARGE bananas or 3 medium bananas
1/3 cup mini Chocolate chips

Glaze
3 tbsp melted butter
3 tbsp honey
Mix together and glaze the bread when done baking right out the oven

Preheat your oven 350 degreees
In a large bowl mash the bananas and sugars together  completely, then add the eggs and blend completely.
Next add the lemon juice,zest, almond and vanilla extracts and melted butter and blend together completely.
Next add the flour,salt and baking soda and fold to combine. Lastly fold in the chocolate chips.
Pour your batter into a well grease baking dish and bake 1 hr or until toothpick comes out clean. Enjoy!

Sugar Snap Peas Recipe

Ingredients
1 1/2 cups sugar snap peas
1/2 cup vegetable broth
5 garlic cloves chopped
2 tsp coconut oil
2 tsp toasted sesame seeds(more if you like)
Salt and pepper to taste

Heat the coconut oil in a hot skillet, then add the snap peas and sauté 1 minutes
Add the garlic sauté 1 minute
Add the broth and allow to reduce on medium hi heat another 3 minutes(for perfect snap)
Do not cook your beans for more than 5 minutes.
Season with salt and pepper to taste, turn the heat off.
Sprinkle on sesame seeds and enjoy!
