Wasabi Shrimp Crusted Salmon

Ingredients 
This recipe is for two servings


2 salmon steak
1/4 pound of shrimp or 6 shrimp
4 tbsp wasabi mustard   (i found this in the kroger supermarket) it can also be ordered on amazon
2 tsp gochujang powder ( i also found this in kroger) it can be ordered online
salt and pepper to taste


Mango puree ingredients
2 medium mangos peeled  and chopped
1 tsp gochujang powder
1 large garlic cloves sliced thinly or chopped
1/4 cup water
1 tbsp brown sugar more if prefer a sweeter puree
2 tbsp butter
1 tbsp chopped fresh thyme


Preheat the oven 400 degrees


season both the shrimp and salmon with the gochujang salt and pepper.
with  a pastry brush – brush all sides of the salmon with the wasabi mustard, 
carefully line the salmon with the shrimp, roast in the oven 15- 20 minutes or until desired doneness of the salmon(do not over cook the salmon)


For sauce put all ingredients except butter and thyme, simmer 5 minutes , place the simmered mango mix into a food processor and puree, return to the stove add the butter and thyme while still hot and keep mixing until butter melts, season to taste with salt and pepper. Enjoy



Salmon Dinner

Ingredients
1/2 tsp sesame oil
2 tbsp brown sugar
2 tbsp soysauce
1/2 tsp “richin” ground chili and garlic in soybean oil(I bought this at the Hong Kong city mall in Houston Texas ) its great.
Salt and pepper to taste

Season both sides of the salmon with salt and pepper , set aside. In a small bowl mix together all the above ingredients , set aside. In a hot skillet sear the salmon on both sides, turn the heat to medium low then pour the sauce over the salmon. Continue cooking two minutes. Remove from the stove and enjoy!

Fried Pollock with Summer Salad

Ingredients
Salad

2cups diced cucumber
1/3 cup diced bell pepper(yellow or orange)
1/4 cup diced kiwi
1/4 cup diced sweet cherries
1/3 cup fine diced red onion
1/4 cup diced poblano pepper
2 tbsp white wine vinegar
2 tbsp olive oil
1 tsp honey
1/2 fresh lemon(juiced)
Salt and pepper to taste

Combine all the vegetables and toss gently.
No a smaller bowl mix the vinegar olive oil honey and lemon juice
Pour over the salad mix and enjoy!

Ingredients
Fish
1 pound fresh pollock
1cup buttermilk
3 tbsp sriracha hot sauce(more if you prefer)
3 large garlic cloves chopped
1 egg
Salt and pepper
1 1/2 cups self rising flour
1/2 cup cornstarch
Salt and pepper to taste
2 tbsp garlic powder(or to taste)
1 tbsp tumeric(to taste)
2 tbsp all purpose seasoning ( or to taste) .
Oil for frying

In a bowl mix the buttermilk,egg,sriracha.garlic salt and pepper. Add the fish to the buttermilk mixture and allow to marinate 30 minutes to 2hrs.
In another bowl mix the flour, cornstarch, garlic powder, all purpose seasoning, salt and pepper and mix thoroughly. Preheat your fryer or skillet add the oil (350 degrees)
Take the fish from the buttermilk mixture drain off the excess and add the fish to the flour mixture coating completely. Gently add the fish to the oil, cook 2-3 minutes per side or until the fish is golden  brown. Remove the fish transfer to a drain rack or paper towel. Serve along side the salad and enjoy!

Honey Grapefruit Baked Seabass

2 pounds striped seabass – cut into portion size
2 medium grapefruits
3tbsp honey
1 lemon
2tsp ginger paste or finely minced
fresh thyme – to taste
olive oil
1/2 medium shallot minced
salt and pepper to taste

Marinate for 15 minutes the fish with olive oil, the zest and some of the juice from 1 of the grapefruits, thyme, 1tsp ginger, salt and pepper. Set aside.
In a small sauce pan combine the juice from the remaining grapefruits, the honey,shallots, lemon juice, remaining ginger, salt and pepper to taste.
Bring to a boil and reduce 5 minutes or by half, set aside, as sauce cools it will thicken.
Preheat your oven 400 degrees, bake the fish 10-12 minutes, until cooked through, remove the fish from the oven, pour the sauce over, allow to rest 5 minutes.
Serve with rice, veggies or potatoes, goes with anything!
I went with roasted chayote squash, i marinate it with some fresh thyme, ancho chili powder, olive oil, salt and pepper in the oven 400 degree 20 minutes, they were perfect!
