Sweet and Spicy Lemon Pepper Chicken

Ingredients

2 pounds chicken wings
1/4 cup dark brown sugar
3 tablespoons lemon pepper seasoning + 2 tablespoons to sprinkle during cooking
2 tablespoons garlic powder
2 tablespoons scotch bonnet hot pepper sauce
chopped fresh parsely – as needed
chopped fresh scallions – as needed

In a bowl combine, wings, brown sugar, lemon pepper, garlic powder, scotch bonnet pepper and salt and pepper.
Mix to combine and allow to marinate 2 hrs or up to over night.
Preheat broiler on high – and roast the wings 12 minutes to develop color and crisp.
Place the wings back in a clean bowl and toss withe the scallions, parsley and reserved lemon pepper. Reduce the oven to regular 350 degrees.
Return to oven and finish cooking the wings 20 more minutes or until cooked through.

Cast Iron Skillet Caramel Apple Pound Cake

Ingredients

Pound Cake
1 cup vegetable oil or 1 cup melted cooled butter
2 cups all-purpose flour
1 cup sugar
4 large eggs
2 teaspoons pure vanilla extract
1/2 teaspoon salt

DIRECTIONS

Preheat oven to 350 degrees.
Using an electric mixer on high speed, beat eggs and sugar until light and fluffy. Add eggs one at a time, beating well after each addition; add vanilla, oil and salt. With mixer on low, gradually add flour, beating just until combined (do not overmix). Heat your cast iron skillet, add 3 tbsp butter coat the pan, then add the cake batter to the pan, after which transfer immediately to the oven.
Bake until a toothpick inserted in center of cake comes out clean, about 1 hour (tent with aluminum foil if browning too quickly). Let cool in pan 15 minutes.

Caramel apples
1/4 cup butter + 2 tbsp to saute apples
 4 large tart apples – peeled, cored and sliced 1/4 inch thick
1/2 cup Dark Brown Sugar  – use light if that is what you have on hand.
1/4 tsp salt
1/2 tsp cinnamon
1/4 cup heavy cream
1 tsp vanilla

Saute the apples for 10 minutes or until softened in melted butter.
Remove from the skillet when done.
Melt the remaining butter in the skillet and add the brown sugar, stir until sugar is nice and melted
Then add the heavy cream, salt, cinnamon and vanilla, simmer 2 minutes until thickened.
Then add the apples back to the caramel sauce, simmer another 1 minute until everything is combined.
Slice your cake, pour over caramel sauce and arrange the apples on top and enjoy!

Steak and Potato Dinner Recipe with Baked Brie

Baked Brie w Toasted French roll
 3 tbsp toasted pecans
3 tbsp chopped granny smith apple
2 tbsp honey
8 oz Brie cheese

top the brie with all the above ingredients
place the brie is a hot 400 degree oven for 10 minutes or until the cheese slightly melted and soft
toast the bread , brush with butter and serve along side

Pan Seared Ribeye Steak
thin cut ribeye
grill mates smoke house maple seasoning
fresh grounded pepper and salt to taste

season the steak with the above ingredients, allow to marinate 15 minutes
sear the steak in a hot cast iron skillet or heavy bottom skillet 2-3 minutes per side or to your desired internal temperature.

Herb roasted potatoes
fresh parsely – to taste
fresh cilantro – to taste
fresh thyme  – to taste
olive oil
salt and pepper – to taste
garlic powder – to taste
crushed chili pepper
fingerling potatoes

combine all the above ingredients in one bowl, toss together
roast in a hot 425 degree oven, until browned around the edges and cooked through

Teriyaki Chicken Pineapple Bowl

3/4 cup low-sodium soy sauce (recommended: Kikkoman brand)
1/4 cup brown sugar, packed
3 heaping tablespoons honey
1 tablespoon chopped ginger
2 garlic cloves, minced
2 boneless skinless chicken breasts – cubed or sliced in thin strips
Freshly ground black pepper
2 teaspoons vegetable oil
paprika – to taste
Garlic powder – to taste
1/2 of a medium onion
2 green onions, green and white parts, sliced
sesame seeds – as needed
salt and pepper to taste

In a bowl combine chicken, onion, paprika, garlic powder, salt and pepper.
Allow to marinate 10 minutes
In a hot skillet sear the chicken till slightly gold brown, then add the soy sauce, garlic, brown sugar and honey.
Mix everything together and simmer on medium high heat until the sauce reduce and become sticky and the chicken is cooked through.
Last few seconds of cooking add as much or little sesame seeds as you prefer!
Serve this up with some steamed rice and veggies! enjoy!

Game Day Chicken Wings 3 Ways

Teriyaki wings
1 cup soy sauce or low sodium soy sauce
1/4 cup honey
1/4 cup brown sugar
1 tbsp sesame seeds or as needed
garlic powder – to taste
paprika – to taste
salt and pepper – to taste
corn starch – as needed

combine the soyauce the honey and brown sugar, simmer on medium heat until reduced by half and thickened,
toss the wings with salt pepper garlic powder and paprika, allow to marinate 15 minutes
add the cornstarch toss with wings then deep fry the wings.
after wings are fried and golden brown toss the wing with sauce,adding sesame seeds as you go along as needed , serve them up an enjoy!

Curry Cilantro Lime Wings
garlic powder – to taste
paprika – to taste
salt and pepper – to taste
corn starch – as needed
1 tbsp curry powder
2 tbsp lime juice
2 tsp ground tumeric
1 tbsp lime zest
2 tbsp fresh cilantro

combine all the above ingredients allow to marinate
roast in the oven 425 degrees until golden and cooked through
serve them up and enjoy!

Hot Buffalo Wings
garlic powder – to taste
paprika – to taste
salt and pepper – to taste
corn starch – as needed
1 cup franks hot sauce
2 tbsp honey
2 tbsp fresh thyme
6 tbsp cold butter

combine honey hot sauce and thyme, simmer 5 minutes on medium low heat
remove sauce from the stove, while still hot whisk in the cold butter until all 6 tablespoons melt and become one with the sauce.
toss the wings with salt pepper garlic powder and paprika, allow to marinate 15 minutes
add the cornstarch toss with wings then deep fry the wings.
after wings are fried and golden brown toss the wing with sauce, serve them up an enjoy!
