Chicken 2 pounds – season
ground ginger
marinate for 30 minutes

Sauce –
1 1/2 cups fresh chopped strawberries
1/3 cup balsamic vinegar
2 Tbsp brown sugar
1 Tbsp honey
1 medium sized shallot
1/3 cup water
1 Tsp ground ginger
1/2 of 1 serrano chili pepper(thinly sliced)
salt and pepper to taste
( please note that the level of tart/sweet of your sauce may need adjusting depending on whether your strawberries are on the sweeter side or more tart side) adjust honey and brown sugar as needed.

combine all ingredients above except honey- bring the sauce to a boil and simmer and reduce by half.
Add the honey, stir, then transfer the entire sauce to the food processor or blend and pulse until smooth. return to the stove and simmer again for 5 minutes. set aside.

Put the chicken in a preheated 400 degree oven 30 minutes, turn the chicken over and start glazing with your sauce. Place back in the oven for 10 minutes, take out and glaze again, repeat this process until there is no sauce left and your chicken is thoroughly cooked through. Remove and enjoy!
