1 pound skirt steak(thinly sliced)
1/2 medium onion
3 large garlic cloves
1 tbsp fine chopped fresh ginger
1/4 cup soy sauce
cup seasoned Rice wine vinegar
1 tbsp corn starch
1/2 yellow bell pepper thinly sliced
2 stalks scallions thinly sliced
1/2 cup carrot thinly sliced
2 tbsp vegetable oil
Pepper to taste

In a bowl mix the cornstarch vinegar and soy sauce – set aside.
In a heated skillet add the oil, once hot add the steak  and sauté on high heat 2 minutes
Add the peppers onion garlic ginger carrots and black pepper  and sauté another 2 minutes. Pour over the cornstarch mixture and simmer until thickened. Toss in the scallions and turn the heat off . Serve with rice or mash potatoes and Enjoy!!
