1 pound salmon fillet
1/3 cup pistachios
1 tbsp chopped fresh thyme
2 tbsp chopped fresh cilantro
2 tbsp chopped fresh parsley
1tbsp melted butter
2 tbsp honey
salt & pepper tt

Season salmon with salt pepper and coat with the honey.
In a food processor add the pistachios, cilantro,parsley,thyme, garlic and melted tbsp butter, pulse until you have a grainy consistency.
Coat the top of the salmon with the pistachio mixture, bake 375 for 12 minutes
top should be golden brown and fish should be cooked through. Garnish with thin sliced scallions and a small drizzle of honey.
