Southern collard greens

Ingredients
1 smoked turkey wing flat
1 bag collard greens or 1 pound
3 tbsp Apple cider
3 tbsp hot sauce or more to taste
1 medium bell pepper chopped
1 medium onion chopped
6 large garlic cloves crushed
Enough water to cover the smoked turkey
Salt and pepper to taste

Strawberry honey Compound Butter

Ingredients
1/2 cup fresh strawberries
3 generous tbsp honey
Salt to taste

In a food processor add the strawberries and honey and pulse for 5-7 seconds just to get a rough chop on the berries . Add the salt and butter and pulse until combined . Transfer to bowl or plastic wrap and refrigerate until ready for use.

Sweet Southern Cornbread

Ingredients
1 cup flour
1 cup cornmeal
3/4 cup sugar
3 tsp baking powder
1tsp salt
1 cup whole milk
1 large egg
6 tbsp melted butter
1 poblano Pepper chopped

Sauté the pepper in a skillet for 5 minutes just to soften the pepper
Combine all the dry ingredients in a bowl , combine all the wet ingredients in a separate bowl.
In a bigger bowl combine the wet and dry ingredients including the sauté peppers and gently fold and mix until combined.

Rum and Raisin Butter
1 stick unsalted butter
3tbsp  rum
4tbsp golden raisins
1/2 tsp cinnamon
Agave

Combine the raisins, agave, rum and cinnamon in a food processor and pulse for rough consistency. Add the butter and pulse again until fluffy just combined, set aside. If your butter was too soft , place it in the fridge for a few minutes.

Preheat the oven to 375 degrees place the corn bread mixture in the center of the oven and bake 20-25 minutes. You can also test your Cornbread by using a toothpick, if it comes out clean it’s done. Remove from the oven allow to rest 5 minutes. Top it with the delicious rum and raisin butter and ENJOY!!

The Best Oven Fried Chicken

ingredients
4 medium sized bone in chicken breast
1/4 tsp cinnamon
1/2 tsp cayenne
1/2 tsp red pepper flakes
1/2 tsp ground coriander
1/2 tsp ground garlic
1/2 tsp chili powder
Salt and pepper to taste
Marinate the chicken with all the above ingredients – 2 hrs or up to over night

Egg wash
2 whole large eggs beaten
2 tbsp milk
2 tbsp hot sauce (more if preferred ) 🙂
Mix thoroughly

Crust Ingredients
5 large fresh garlic cloves
5 sprigs fresh thyme
1 cup fresh parsley
Salt and pepper to taste
1/2 tsp red pepper flakes
1 cup panko bread crumbs
3 cups plain cornflakes
1//3 cup Parmesan cheese
In a food processor add all the crust ingredients and blitz until you have rough but small crumbs
Set aside.

Instructions
Pre heat your oven 375 degrees
Prepare a greased baking pan
Take the marinated chicken and coat it in the egg mixture completely.
Then take the egg coated chicken and coat it in the cornflake crumb.
Allow to rest 5 minutes before placing it in the oven .
Just before going in the oven lightly drizzle coconut oil (which i used) or butter which also works.
Place the chicken in the center of the 375 degree oven and bake 30-45 minutes . This recipes varies as far as the time. It depends on how many breast you’re making and the condition of your oven. Some may take 1 hr. To be sure, your internal temp of your chicken should read 165 degrees. The. Immediately remove from the hot pan allow to rest 5-10 minutes and serve warm. ENJOY.

Bacon Ranch Potato Salad

Ingredients
1 1/2 pounds potato chopped into cubes and boiled Until tender do not over cook.
1/2 of a large green bell pepper chopped
2 stalks of scallions chopped
3 large eggs boiled peeled and chopped
6 strips of bacon cooked and chopped
2/3 cups mayo
3 tbsp grainy Dijon mustard
1/4 cup sweet relish or sweet pickles chopped
The juice of 1/2 of a lemon
1 packet hidden valley ranch original
Salt and pepper to taster
IF YOU PREFER A MORE RUNNY OR WET SALAD FEEL FREE RO USE MORE OF THE ABOVE INGREDIENTS. THIS WAS PERFECT FOR ME.

In a bowl combine the mayo,mustard,relish,lemon juice, hidden valley ranch packet, salt and pepper mix to combine. In a larger bowl combine the bacon,  potatoes,peppers,scallions,eggs and pour over the dressing, gently folding until combined. For best results allow to chill in the refrigerator 4-6 hrs before serving !! Enjoy!
