Guiness Barbecue Wings

Ingredients
8 chicken wings
1/2 tsp cayenne pepper
1 tsp smoked paprika
Salt and pepper to taste

Guiness Barbecue Sauce
8 oz Guiness beer extra stout
1/2 cup brown sugar
1/3 cup Apple cider vinegar
1/4 cup soy sauce
2 tbsp grainy Dijon mustard
One 8 oz can tomato sauce
3 tbsp cold unsalted butter
Salt and pepper to taste

WHEN YOU MAKE THIS SAUCE TASTE IT SO IT CAN BE PERFECT FOR YOU, YOU MAY LIKE A MORE TANGY OR SPICY OR SWEETER SAUCE. HOWEVER THE RECIPE IS FOOL PROOF AND DELICIOUS.

Combine the sauce ingredients EXCEPT the butter,  into a sauce pot and simmer on medium low heat 30 minutes or until it coats the back of your spoon. Turn the heat off wait 30 seconds  and then whisk in the cold butter.

Season the wings with the above ingredients and allow to marinate 30 minutes
Place the wings in a 375 degree oven 20 minutes or until slightly golden. Remove from the oven and coat the wings with half of the barbecue sauce. Place the wings back in the oven for another 10 minutes , remove from the oven and coat again with the remaining barbecue sauce and bake another 10 minutes. Then it’s perfect! Enjoy!

Ethiopian Berbere Lamb Recipe

ingredients
4 lamb ribs (use any part of the lamb you prefer)
2 tbsp keith Lorren seasoned sea salt
2 tbsp keith Lorren Ethiopian berbere seasoning
3 tbsp oil for searing
Season the lamb with the above spices and allow to marinate 2hrs to up to over night
I’m a heated skillet with the oil sear the lamb on on both sides until desired doneness
I cooked mines 5 minutes per side

Sauce
3 large garlic cloves crushed
5 fresh thyme sprigs
2 tsp keith Lorren Ethiopian berbere spice
3/4 cup heavy cream
2 tbsp butter
Salt and pepper to taste
 In a pot combine all the above except the butter salt and pepper
Bring to a simmer 5 minutes until thickened
Remove from the heat and season with salt and pepper and butter
Mix until butter melts

Vegetarian Chow Mein

Ingredients
1 package Chow Mein noodles(cook to the directions on the back of your package)
1/2 medium onion thin sliced
1/2 medium bell pepper thin sliced
3 large garlic cloves
3 tbsp fresh ginger chopped
2 stalks scallions chopped
1 small can bamboo shoots
1 small can baby corn
1/3 cup thin sliced carrots
1/2 cup washed rinsed and steamed fresh snap peas
1/4 cup chopped cashews for topping
1tsp white sesame seeds
1 tsp black sesame seeds

Sauce
1/4 cup soy sauce
1 tbsp cornstarch
2 tbsp honey
2 tsp sesame oil
2 tbsp coconut vinegar(rice wine vinegar is a great substitute)
Pepper to taste
If you want it more salty add salt. With this recipe i did not use salt in my dressing

Heat you skillet or wok using add oil once the oil is hot add the garlic ginger and onions and sauté 2 minutes medium high heat. Next add all the other veggies and sauté 3 minutes. Add the noodles and stir rapidly,  you should always have a consistent sizzle in your pan so if you do not have a sizzle your heat is too low crank it up! Pour the sauce on and stir for one minute . Cut the heat off add the sesame seeds and serve warm. Topping each bowl or plate with scallions and chopped cashews .
