1 1/2 tsp tamarind powder
lime zest( from one lime)
lime juice (from 1 lime)
1/2 teaspoon cumin
Season the salmon with the above ingredients except the honey, roast in oven 12-15 minutes
oven temperature 425 degrees.
Half way through cooking time drizzle honey all over salmon, put back in the oven to finish cooking.
Garnish with some fresh scallions and more lime wedge, Enjoy!
1 whole 1 1/2 pound seabass
4 tbsp grated orange zest
1 tablespoon tamarind powder(add more if desired) its strong
crushed garlic 4 cloves
1/3 cup thin sliced white onion
3 tablespoon scallion
1 tbsp olive oil
1/4 cup of the fresh juice from the orange zested
salt and pepper
Slice the fish across, should be at least 5 pieces 2 inch thick cuts
Add the olive oil and all the above except garlic, orange juice and onion
Mix the seasoning all over the fish, let marinate 30 minutes in the fridge
In a pan add the orange juice and sprinkle the onions and garlic in the pan
Add the fish, do not cover
Bake in a screaming hot 450 degree oven for 12 minutes or until your desired doneness
When done base the fish with the pan juices and serve
